Papa Charlie's Mushroom and Swiss Italian Beef Sandwich

Pile some steamy, mushrooms with melty Swiss cheese on top of Papa Charlie's Italian Beef for a new sandwich twist.
1 pound Papa Charlie’s Italian Beef
4 slices of Swiss cheese

2 cups white mushrooms (cleaned and thinly sliced)
4 slices of Italian bread
2 tablespoon olive oil

3 teaspoons butter, salt, and pepper to taste

Prepare Papa Charlie’s Italian Beef as directed by package.

Meanwhile, heat olive oil and sauté the mushrooms over medium heat until tender. The mushrooms will soak up the oil, shrink, and then will make juice. Let the liquid evaporate, stirring occasionally for about 10 minutes. Sprinkle salt and pepper to taste. Set the mushrooms aside.

Butter on side of each slice of bread. With the butter on the outside, place Papa Charlie’s Italian Beef on the bread. About 2 oz. per sandwich. Then spread sautéed mushrooms evenly over the meat. Place Swiss cheese on top of the mushrooms and grill in a large frying pan until golden brown.
