I don’t know about you, but my family always gets really busy in May. It’ll be especially hectic for us this year because our second-oldest daughter, Sam, is graduating from high school. Step Up to the Plate

I just got back from a great weekend visit with my oldest daughter, Alex, in Denver. We had a blast. Got to see Skyline Park in springtime. Saw a couple movies. We even caught some of the Rockies home opener on TV Friday afternoon.

I love this time of year. Everyone’s got spring fever. Back home here in Chicago, all anyone can talk about is baseball. And we’re busier than ever at our plant, slow-cooking whole beef roasts every day to feed all those hungry Cubs fans. After all, Papa Charlie’s™ is the official Italian beef of the Chicago Cubs. You’ll find it at concession stands throughout the stadium. It sold like crazy at the home opener on Monday night!

Italian Beef with a Kick

Well, it’s back to the grind here at Papa Charlie’s™ after a great spring break. My wife and I decided to take the kids to Mexico for the week, and I’m so glad we did. We realized it was probably our last chance to have a real family vacation before our second-oldest daughter, Sam, goes off to college this fall. And I gotta tell you, we needed the break. It’s been a long winter here in Chicagoland, and everyone’s been battling head colds. A few days on the sunny beach were just what the doctor ordered.

Momma welcomed us home with a big Easter dinner, and we even brought a little Mexican flair to the feast. We discovered that fresh, spicy salsa goes great on top of a juicy Papa Charlie’s™ Italian Beef sandwich. I can’t believe I never tried that before. It might just be my new favorite topping. See, even the Papa Charlie’s™ family is still figuring out new ways to eat our great Italian beef. We hope you’ll try it, too. I’m happy to say that the weather here in Chicago is finally starting to warm up. Spring is right around the corner, and we’ll all be having cookouts and get-togethers before you know it. So make sure you have plenty of Papa Charlie’s Italian Beef on hand to feed everybody! It’s a great quick dinner after baseball tryouts or on movie night when you’re trying to catch up on those Oscar-winning flicks. Our family keeps a freezer full, and we eat it almost every Sunday.

If you can’t tell, we’re passionate about our beef. So are all our loyal customers. That’s why we renamed this page the Beef Blog — a place to talk about our beef and what it means to our family.
